Here is a quick make ahead Spring side dish. I often cook pasta for two days ahead. I buy organic baby carrots often. This month I added some spring green colored foods. Pictured is brown rice pasta with five sliced baby carrots, three stalks of celery thinly sliced and five asparagus spears. The asparagus was baked for ten minutes in a 400 degree oven then broiled until lightly browned. I added a tablespoon of walnut oil, some 21 salute seasoning and red pepper flakes. The next time I made this I added even more Spring green color with one serving of cooked frozen organic edamame. This made a complete meal following choose my plate guidelines. Half vegetables, a quarter protein and a quarter whole grain.
