Ginger Salad Dressing

I rarely buy bottled dressing.  I make my own dressing for each salad in a small tupperware container.  I like experimenting with different combinations and it only takes a few minutes.  I served this ginger dressing over a modified Waldorf salad.  I used organic mixed greens, half an organic apple, 1/4 cup of walnuts and one slice of reduced fat munster cheese.  I saved on calories by using the sliced cheese at only 80 calories.

1 tsp rice vinegar

1/2 tsp olive oil

1/4 tsp grated fresh ginger

Shake and serve over salad
